New England’s favorite outdoor dining experience, the Whim Dinner Series at Smolak Farms, continues this summer with some of the region’s best chefs taking over the farm’s Pine Grove to host an intimate, multi-course farm-to-table dinner featuring fresh ingredients grown on-site by the Smolak team. On July 23rd, 2019, join Director of Culinary, Elliot Williams of 110 Grill as he kicks off the evening with starters including Ratatouille Bruschetta prepared with Fresh Mozzarella, Grana Padano Crostini, Balsamic Reduction and Roasted Beet Salad with Roasted Baby Beets, Arugula, Spinach, Bull’s Blood Microgreens, Goat Cheese, Pickled Onions, Candied Walnuts, Red Wine Vinaigrette. For an entrée, guests can dig into the Cuban Swordfish with Cajun seared swordfish, chilled rice salad, black bean puree, micro arugula, lime sour cream and grilled citrus; and the BBQ Steak Tips with sweet corn risotto, bbq drizzle and sunflower sprouts; followed by a dessert course of Raspberry Shortcake with buttery pound cake, fresh raspberries, mascarpone cheese, pistachio ice cream and raspberry coulis to end the dinner on a sweet note.
On July 31, 2019, Chef Tyler Kinnet from Harvest will take over Pine Grove, welcoming guests with his first course of Cucumber Gazpacho with charred apricot, feta cheese and nasturtium, followed by Summer Berries with chamomile ricotta, coriander honey, grilled focaccia and mint. Roasted Beef Striploin will be served as an entrée with summer squash, tomatoes, broccoli pesto, pine nuts and parmesan, while Kinnet’s Blueberry Crumb Cake with vanilla creme fraiche and hazelnut dacquoise caps off the evening. The Whim Dinner Series at Smolak Farms takes place every Wednesday evening now through August 28th, 2019, beginning at 5:30pm at the farm located in North Andover, Massachusetts.
