Bin 36 is unlike any venue in NY. So it was refreshing to visit there in Chicago, especially as a wino.
The premise of the space is a wine and cheese bar that also host wine events and classes, and has a wine shop in case you want to take your selections home. This place can easily be added to the list of perfect date spots in Downtown Chicago, perfect to work into business trips or getaways, bachelorettes, birthday parties, or even just a girls night out.
Upon entry, the sheer space of the venue is apparent and you would never guess the space has been around for almost 15 years! There is a cheese bar, the Tavern, the Cellar, the Wine Bar – which is where we sat – and the Market, where you can get wine and gifts to go. They also have an event space upstairs, which they were prepping for their annual NYE party.
We decided to do the “Nothing Like a Little Bubbly” tasting, as described on the menu. Enoch Schully, the Wine Director, recommended the Triple X Bin 36 Cheese Flight to try with this pairing. The sparkling wines went from light to most complex and were from Prosecco, Italy, Catalonia, Spain, Albuquerque, New Mexico and Vouvray, France respectively. Getting to try wines from such varied areas in one sitting is hard to come by.
The cheeses were also from varied areas, but still complimented each other perfectly. The light, crisp taste of the sparkling wines paired perfectly with the rich, creamy flavor of the cheese combination.
This place is an unpretentious place to figure out your wine palate, and you’ll have a team of expert professionals to pave the way with knowledge along the way. This also rings true with the picking the Cheesemonger’s brain at the Cheese Bar. This place is a must to visit as a resident of Chicago or someone who is just passing through.
They also host an exciting annual event called Bubble Bath, which provides unlimited sampling of over 50 sparkling wines and champagnes from around the world, partnered with small bites. That might be worth the trip to Chicago alone! We didn’t get a chance to try the dinner menu, but with the way they talked it up, and the specials they have daily, we will definitely be back.
