As if al fresco dining on one of the first beautiful Saturdays in NYC wasn’t enough, Malibu Rum really upped the ante this weekend by hosting a Saturday spring soiree filled with our favorite things: booze + brunch!
One can’t help but notice that NYC has experienced several “false-starts” with the spring weather, so it seemed like every NY’er was out in full force to enjoy a little sunshine. The rooftop at 230 Fifth proved to be no exception!
While we sipped Malibu Rum’s new sparkling beverage Malibu Rum Sparkler – a mix of rum, coconut water, and sparkling – we also
stuffed our faces nibbled on waffles, eggs, delicious bacon, shrimp and grits, and all the standard brunch fare that we love. You must check out their new infused cocktails… delish!
- 3 parts Malibu Rum Sparkler

- ¼ part simple syrup
- Dash fresh lime juice

- 3 parts Malibu Peach Sparkler
- 1 part orange juice
- ¼ part simple syrup (optional)
Build in a chilled flute glass. Garnish with an orange zest.
Who doesn’t love a sparkling adult beverage in the sunshine with new/old friends? We had a grand time and kicked off Derby Day in style. Not to mention THIS adorable little gal named Sonny Rocket, who became our unofficial boozy brunch mascot.
