As we sat watching the sunset over the Manhattan Skyline from the very lush new rooftop at the Williamsburg Hotel, sipping a rosé cocktail from a coconut, it was definitely a pinch yourself kind of moment.
With the pristine pool and soon to be water tower bar in the peripheral view, there was not a doubt in anyone’s mind that this is the new place that everyone needs to be. But we’re getting ahead of ourselves here.
The purpose of our voyage to the Williamsburg Hotel was to check out all the new new at the Williamsburg Hotel, which included the food and beverage menu and the rooftop and pool space. We began our tasting of new Beverage Director, Rael Petit’s innovative cocktails at the Harvey, a colorful bar and restaurant nestled down a spiral staircase that we’ve also done a High Tea at.
High Tea also seems pretty apropos considering one of Petit’s newest concoction, “If You Like Pina Colada” incorporates a small dosage of CBD along with Kikori Japanese rice whisky, lime and pineapple juice, served out of a lucky cat glass with torched coconut to boot. You can definitely tell this is not Petit’s first cocktail rodeo.
To compliment Petit’s whimsey, we also got a taste of Executive Chef Nic Caicedo’s menu, included some gazpacho, ceviche and gnocchi dishes, that are perfect for summer.
As if we could not be impressed more, it was then that we were introduced to the roof and transported from Brooklyn to a posh pool setting, that also happens to have an unobstructed view of the Manhattan Skyline. What’s even better is that you don’t need to be a hotel guest to utilize the pool. But we weren’t done. The hotel pulled back the curtain so that we could check out the chic hotel rooms with the extremely high ceilings and the event spaces that the venue also has in their back pocket. The hotel would be perfect for a staycation location to make you feel like you’ve left New York, even though you’re still here.
